Ingredients1 cup watermelon chunks (seedless)
1 cup lemon juice
1/2 cup sugar
pinch of salt
1 small bunch of mint leaves
1/2 cup ice cubes
Cold water
Method– In a blender, blitz watermelon, lemon juice, sugar and salt.
– Strain and add cold water to dilute.
– Place mint at the bottom of a pitcher and muddle.
– Add watermelon juice and ice, and serve chilled.

6 cups cold water

Method– In a bowl, dilute sugar granules in lemon juice.
–Add water, salt and vanilla extract.
– Stir well, add ice and serve.

1 cup thinly sliced fresh unpeeled ginger
For Punch
3 cups unsweetened pineapple juice, chilled
2 cups water
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
MethodFor Ginger Syrup
–In a heavy pan bring sugar, water, and ginger to a boil, stirring until sugar is dissolved
–Simmer mix for about 10 minutes, stirring off and on
–Steep mixture off of heat for about 20 minutes
–Strain syrup into a bowl, discarding the ginger
–Chill covered until cold for about 2 hours.
To Make Punch
–Mix juices together, add water and ginger syrup.
Serve over ice.
