A lazy Saturday and the want to cook a perfect breakfast contributes to a great recipe on my blog. I will be very honest that I am trying my best to be a big fan of cooking, (although I love baking), getting up early and cooking has it's own charm. Today's post is all about 'Breakfast on Bed' recipe. The only reason I am posting this on a S-A-T-U-R-D-A-Y is because I would love all my readers to try this for Sunday morning. The ingredients are super easy and super fun to use. And yes it's a very healthy dish too :)
Cooking time: 10 mins
Ingredients: Red & yellow Capsicum, you can use green as well, Onions, Tomatoes, Shallots, Olive, Zucchini, Mushrooms, coriander (the veggies can be of your choice totally). White bread or brown. Salt, pepper and oregano for taste and yes olive oil to fry.
Method: In a bowl, mix all the veggies, add salt, oregano and pepper and 2 tsp olive oil. In a frying pan, put 1 Tablespoon Olive oil and caramelize all the vegetables for 3 minutes. No make a hole in the bread-piece and put in on a non stick pan. Break the egg in-between the hole of the bread and let it cook for few minutes. Add the caramelized veggies on the border. Sprinkle slat and serve it with love!
