Weekend calls for healthy indulgence and some home cooking, isn't it? Since a lot of you already know that I am trying to change my food habits and that I love to create alternate recipes, so today on the blog I have a healthy yet delicious couscous salad vegan salad. It's really simple to make and it it's absolutely filing.
Ingredients
1 cup couscous (dalia)
1 Pomegranate
1/2 cup boiled Kidney Beans
1/2 Onion
Green veggies Brocallie, Beans or any other seasonal vegetable
Dressing
1 cup low fat hung yogurt
1-2 Tablespoon olive oil
2-3 finely chopped Garlic
1/2 Tsp Tabasco sauce
3-4 Tablespoon lemon juice
Salt to taste
(To the hung yogurt, add all the ingredients and keep it in fridge)
Direction
Roast 1 cup couscous then cook it with 3/4th cup water and 1 table spoon olive oil in a pressure cooker. As soon as you hear a whistle, take t off the gas and let it cool so that you get separated grains for the salad. To this add boiled kidney beans, green veggies, onions, pomegranate and salt. Top it with yogurt dressing and mix the salad. You can serve it cold or just garnish it with lemon rind.
